Tartine Spicy Chicken

Spicy Chicken Ingredients 

Serves 6

  • 9 boneless chicken breasts 
  • 6 large shallots 
  • 1 Tb ground sage 
  • 1 Tb fresh sage 
  • Juice of 2 lemons
  • 1 tsp crushed red pepper flakes 
  • 6 tb salted butter 
  • 1 bottle of white wine (Savion Blanc or Sancerre) 
  • 6 gloves minced garlic 
  • 2 Tb olive oil
  • Kosher salt
  • Fresh ground pepper

Spicy Chicken Instructions

  1. Heat 2 Tb of olive oil on medium heat in a large saute pan. Add minced garlic to oil. Stir with wooden spatula until garlic becomes soft and fragrant. Meanwhile, cut chicken breasts into large cubes (1 to 2 inch squares). Next, add chicken cubes to olive oil and garlic. Season with salt and pepper. Add crush red pepper flakes and stir chicken around turning your heat up to medium-high. Cook chicken until it is browned on all sides (8-10 minutes)
  2. Once chicken is browned, remove chicken from pan and place to the side in a glass bowl or large plate
  3. Add 1 cup of white wine to deglaze saucepan scraping the bottom of the pan. Turn up heat to high to cook off white wine. 
  4. Dice shallots until they are finely chopped. Add shallots to pan on medium heat and cook until they are soft and translucent. Next add 1 Tb of ground sage, juice of two lemons and 3 cups of white wine. Stir occasionally while bringing pan back to high heat and wine to boil. Once wine has come to a boil, turn heat back down to medium low heat. Add your butter and stir until butter is fully melted into the sauce. Your sauce should end up with a light brown coloring. 
  5. Next, add chicken back to pan and stir it all around coating chicken with sauce (if your sauce turns out to be too thin you can add more butter to thicken its consistency. Add more white wine if its too thick!). 

Guacamole Ingredients 

  • 6 avocados
  • 1/2 cup diced red onion
  • 1 Tb ground cumin
  • 1 lime
  • 1 tsp kosher salt
  • 1/2 tsp fresh ground pepper. 

Guacamole Instructions 

  1. Cut avocados in half the long way. Remove pits and scoop avocado into a large bowl. Add 1/2 cup of diced red onion, 1 Tb cumin, juice of one lime. Season with salt and pepper to taste. Mix together pressing avocados with a wooden spoon or spatula removing most of the lumps. 

French Fries Ingredients 

  • 1 gallon of frying oil (Canola, Corn or Vegetable)
  • 6 large potatoes 
  • kosher salt

French Fries Instructions 

  1. Add frying oil into a large pot (I use a cast iron pot and heat on my gas grill). Heat oil on high until oil reads 385 degrees on a thermometer (frying temp).
  2. While oil is heating, peel potatoes. Cut lengthwise into thin shoestring french fries. Immediately add fries to a bowl of cold water. Repeat until all of the fries are submerged in water. The water will turn cloudy (thats OK! You want to remove the starch from the potatoes for frying purposes). Empty water and add fresh water 2 to 3 times or until water remains clear. 
  3. Remove fries from water and lay out on a towel to dry. 
  4. Once oil reaches 385 add french fries to oil in batches. Fries will rise to the top and turn golden brown. Remove from oil and place to the side on a paper towel. Season with salt as soon as they are removed from oil. 

** You can use frozen fries and heat in oil or bake in the oven as well!

Plating and Assembly

  1. Spoon chicken on to a plate adding some sauce to cover.
  2. Add a spoonful of avocado to the side and a handful of fries. 
  3. Finally, take a bite of each and let flavors mix together!!!!
